◇The rice which basked in sun shine !!
We dry it with sunshine naturally, without sing the machine.






◇The fresh fish
We bring up three kind of fish (Iwana, Amago, Nijimasu) using a beautiful sprng of the Shirakawa-go. To have you eat from cook, after having taken order. The meat of the fish which we brought up is tightened well, because water temperature is low.





◇Homemade miso (soybean paste)
We boil down a lot of soybeans slowly at a fireplace and make miso. It is important work f the coldest time in winter.







◇Mountain vegitables
When a season of long winter passed, we g to mountain to pick a lot of mounain vegitables. It are special taste that cannot eat at the city.

The historic village of Shirakawa-go was registered as a world herirage of UNESCO in December 1995. There are 114 gassho-style architecture in the world heritage area. (gassho-style:the style f traditional house in Shirakawa-go) 
 "BUNSUKE" is a restaurant of gassho-style architecture in the world heritage area.
 Iwana which caught in Shou-river was valuable protain for people of the Shirakawa-go to live in deep mountain. Therefore Iwana has been loved all the time from old days by people of Shirakawa-go.
 We bring up Iwana and Amago and Nijimasu using beautiful apring of Shirakawa-go. To have you wat  a fresh fish, we take those fish from pound and cook, after having taken order.
 You can eat good flaver cokking while enjoyung beautiful scenery of Shirakawa-go.
 It is the small restaurant of family operation, but hink that we want you to feel simple family life of Shirakawa-go.
